In a romantic, countryside setting, Le Petit Jardin welcomes you within the castle grounds. There, the menu places the emphasis on fresh, quality products, all sourced from the local lands. Le Petit Jardin is the perfect place for all your lunches, dinners, cocktail receptions and company parties. A word from our Chef François Pelletey: 'I'm passionate about vegetables. In my dishes, I aim to highlight a key ingredient, like a central theme that I then reimagine in all its forms. With respect for the product, I don't throw anything away. I keep the peelings to make stock, I infuse oils with the tops and when I poach a fruit, I keep the syrup to make sorbets. When it comes to vegetables, I look for freshness, but I also like to ferment products and offer a touch of acidity to my dishes, like an element of surprise. What I immediately liked about Chenevière was its permaculture garden and working directly with the market gardener, Pierre Vandaële. I don't want to completely reinvent Le Petit Jardin, but to continue what Hugo Genty, the restaurant's former chef, has built, while adding my own personal touch. Just like Hugo and Dider Robin, chefs at Le Botaniste, I love working with local producers. Short supply chains and zero waste are values I learnt while working in restaurants in Montreal, including O'Thym. I'm originally from Bayeux, and I'm happy to be back home rediscovering this land, and the seafood we're so lucky to have and which I hope to honour within my menu'.
